This year Miracle features coffees from two of our relatively newer, but increasingly vital supply chains in Colombia and El Salvador.
Santa Maria, Huila, Colombia
Two lots from the north of Huila Department form the foundation of Miracle - one fully washed, one natural. Cuatro Vientos buys coffee from about 200 individual producers in the community of Santa Maria. Elevations here reach an impressive 2,000 meters with coffee grown on impossibly steep mountain slopes.
New to us this year is a natural process component which contributes rich, winey red fruit notes. Its fully washed companion contributes notes of citrus, red apple, caramel, and honey.
Santa Ana, El Salvador
This lot comes to us from our friends at Los Volcanes by way of the San Miguel dry mill in Ahuachapán, El Salvador. The growers contributing to this lot cultivate mostly Bourbon and Pacas on the slopes of the Santa Ana Volcano, known traditionally as Ilamatepeq ("mountain of the old woman"). Coffee production in El Salvador has declined significantly in recent decades under pressure by civil conflict, climate issues, crop disease, labor scarcity, and unsustainable coffee prices, and yet we have optimism for the future of this project between COEX and Los Volcanes. This lot helps bring balance to the blend and contributes warm, holiday spice notes.
